Commercial Kitchen Hood Switch Replacement: A 7-Step Checklist After a $4,800 Mistake

When to Use This Checklist

If you manage a commercial kitchen — a restaurant, hotel kitchen, central prep facility, or even a cafeteria — you've seen a hood switch fail. It's not a matter of "if." It's "when."

I work at Tiger, a B2B kitchen equipment company. I handle operations — which usually means I'm the person on the phone when something goes wrong. Since 2017, I've processed roughly 340 kitchen projects. I've kept a log of every major mistake our team made. Some of those mistakes were mine. Most of them, honestly, were mine.

If you're outsourcing to a service provider, you only need to worry about steps 1 and 2. But if you're doing the replacement yourself, do all seven.

The 7-Step Checklist

1. Kill the Power — Then Verify

Sounds obvious. I know.

I put it first because it's the step most people get wrong. In September 2022, we were doing a switch swap at a hot pot chain. I pulled the plug on the main breaker, checked the panel, confirmed zero voltage. Then I opened up the switch and started working.

Turns out that unit had a two-breaker configuration. The main was off, but a secondary circuit still fed the switch panel.

I got lucky. A multimeter took the hit, not my hand.

Don't rely on the breaker alone. Test with a non-contact voltage tester at the switch's terminals — both input and output. Then confirm with a multimeter. Both must read zero before you touch anything metallic.

Checkpoint: Voltage tester shows zero at the switch input, output, and ground. If there's any hesitation, stop and call an electrician. There's no shame in it.

2. Pull the Switch Plate and Record the Part Number

Most people skip this. Do not skip. The part number is the difference between a 15-minute repair and a return shipment that takes two weeks.

Remove the switch plate. Take a clear photo of the nameplate with your phone. Do not write it down by hand. Take a photo.

You need these numbers: model, serial, voltage, amperage, frequency. All of them must match the replacement exactly. If your unit is imported, double-check whether it runs on 50Hz or 60Hz. Some overseas manufacturers use 50Hz for commercial units, which changes the switch specification entirely.

Checkpoint: Photo of the nameplate exists. Serial and model numbers are legible. Voltage, amperage, and frequency match what you'll order.

3. Order the Right Replacement — "Close Enough" Is Not Enough

This is where money leaks.

Commercial hood switches range from $35 to $220, depending on configuration and brand. Based on our order history, I've seen roughly 340 replacement kits over five years. The failures I've tracked tend to cluster around switches that were "compatible" but not exact matches.

Two years ago, a customer swapped in an $8 aftermarket switch. Three weeks later it failed. This time it took the control board with it. Total damage: $640, plus a weekend of downtime for the restaurant.

My rule: order from the OEM or an authorized distributor. If you source elsewhere, verify the spec three times — voltage, amperage, wiring configuration. I've seen too many "direct replacements" that weren't.

If you're managing a small operation — a single white range hood wall mount in a 30-seat café — the process is identical. Small order, same standards. I've said this before and I'll say it again: a $200 order deserves the same care as a $20,000 one. Some suppliers will act like it doesn't. Those aren't the ones you want to work with long-term.

4. Photograph the Wiring — Twice

This is the $4,800 mistake.

In March 2023, we were doing a hotel project. Fourteen kitchens, all with white range hood wall mount units. The switches needed replacing. I uninstalled a switch, took one photo from one angle, and moved on.

When I rewired it, I used the photo as my guide — and I mixed up two wire positions. The switch for kitchen three shorted. It cascaded. The hotel restaurant was down for a weekend.

$4,800 in parts and emergency service. Downtime losses hit higher. My manager was not happy. That's the polite version.

So: photograph the wired configuration from two angles. Photograph the bare terminals after removal. Draw the wiring diagram on paper. Label the wires with tape before you disconnect them. Every wire — even if it's "just one."

I was working under time pressure on that hotel job. Had a two-hour window before the dinner service. Normally I'd double-check everything. But with the clock running, I cut a corner. I paid for it. You don't have to.

Checkpoint: Two photos exist. A hand-drawn diagram exists. Every wire is labeled. If you're relying on memory, you're not ready to disconnect anything.

5. Install the New Switch — Slow Down

The installation itself is straightforward. Remove the old switch. Terminate the wires on the new switch at the corresponding positions. Secure the switch. But "straightforward" doesn't mean "fast."

I allocate 45 minutes for this step. Not because it's complex, but because every connection gets verified.

If you've worked with switch replacements before, you already know the drill. If you're new to this — terminals are labeled. Follow the diagram from Step 4. If the diagram is unclear, stop and re-draw it before continuing.

Checkpoint: Every wire matches the diagram. No copper is exposed beyond the terminal. The switch is physically secure in its mount.

6. Test Before You Close the Panel

Restore power. Test the switch. Then don't close the panel — yet.

Use a multimeter to confirm output voltage within range. Flip the switch on and off. Listen for abnormal sounds. Watch for arcing. Smell for anything burning.

Leave the panel hanging for at least five minutes. Most problems — arcing, overheating, buzzing — surface within the first few minutes of operation.

I've watched a colleague close a panel "because it looked fine." Two hours later, the customer called about a burning smell. A terminal screw had loosened during operation.

Checkpoint: Normal voltage, no abnormal sounds, no odor, no visible arcing. After five minutes, still normal. Then close the panel.

7. Document and Close Out

After you've confirmed everything works — power off one more time, close the panel, power on — take one final photo. Log it in your project record with a date and kitchen identifier.

This sounds like busywork. It isn't. I can't tell you how many times a kitchen manager has said "we already replaced that" — and we had no record of it. Re-verifying takes longer than taking the photo.

There's something satisfying about closing out a job with no callbacks. After years of small mistakes that added up, a clean replacement hits different.

Common Mistakes and Closing Notes

Three things to add before you close this tab.

First: never trust your memory. I've been doing this for eight years. I still photograph everything. Your recall of the wiring will not match the actual wiring a week later. I don't care how simple the setup looks.

Second: no order is too small. This is a principle, not a preference. A single hood switch replacement in a small café deserves the same care as a fourteen-kitchen hotel contract. When I started out, a supplier once refused to sell me a single unit because my order was "below minimum." I found someone else. We still order from the second supplier today — in numbers that would've exceeded the first one's minimum ten times over.

Third: ask, always. There's no such thing as a dumb question about electrical work. If your supplier has a support line, use it. I'd rather answer a question before the installation than respond to a fire report after it.
